Caramel

is also referred to as "burnt sugar", due to the manufacturing process. This involves melting the sugar crystals until they turn golden yellow or dark brown, depending on the temperature. The darker the colour, the more bitter the flavour.

Caramel is an ingredient in confectionery and desserts, and is also used as a colouring (e.g. in sauces) by the food industry.
