is the result of a time-consuming distillation process. This distillate, which is produced by the complex pot still distillation process, is a mixture of alcohol, water and essential oils.
The process can generally be divided into three separate stages: the heads, the middle run and the tails. In spirit production, only the middle cut, or 'heart' is used. As a rule of thumb, 100 litres of raw distillate produces around 25 to 35 litres of middle cut.
